Peppered Beef Steak with Noodles

Ingredients:
- 2 tablespoons soy sauce
- 4 tablespoons Shaoxing wine (or dry sherry)
- 3 cloves garlic, crushed
- 1-inch piece of ginger, peeled and grated
- 450 grams beef steak (skirt steak works well)
- 1 tablespoon vegetable oil
- 2 tablespoons cornstarch
- 1 tablespoon sesame oil
- 1 onion, thickly sliced
- 1 red bell pepper and 1 yellow bell pepper, both cut into 1-inch pieces
- A pinch of sesame seeds
- 1-2 teaspoons crushed black peppercorns
- 500 grams cooked noodles, for serving
Cooking Steps:
Step 1:
- Mix 1 tablespoon soy sauce, 1 tablespoon Shaoxing wine, 1 crushed garlic clove, and half of the grated ginger. Pour this mixture over the beef steak and let it marinate for at least 20 minutes or up to 1 hour. Heat a frying pan until very hot. Remove the marinated steak and scrape off excess marinade. Brush the pan with vegetable oil. Place the steak in the pan, leave for 2 minutes, then gently move it around to capture any charred bits for added flavor. After another 30 seconds, flip the steak and cook for 2.5 minutes on the other side. Remove and set aside on a plate.
Step 2: 2. Mix cornstarch with the remaining soy sauce and Shaoxing wine, then add 150 milliliters of water. Heat sesame oil in a wok or frying pan over medium-high heat, then add the onion. Cook for 1 minute, stir, and add the bell peppers. Cook for 4 minutes, stirring occasionally. Once they begin to soften and char slightly, add the remaining garlic, ginger, and soy mixture. Once the sauce starts to thicken, remove from heat. Step 3: 3. Slice the beef steak thinly, return it to the pan, and stir to combine.
