Teriyaki Tofu

Prepare this simple vegetarian midweek meal by marinating tofu in teriyaki sauce and serving it with broccoli and noodles or rice. It takes less than 30 minutes to make. 
Ingredients:
- 1 tablespoon olive oil
- 400g firm tofu, cut into bite-sized cubes
- 1 head of broccoli, cut into florets with stems peeled and thinly sliced
- 1 bunch of spring onions, white and green parts separated, thinly sliced
- 8-10 tablespoons teriyaki sauce
- Cooked rice or noodles, for serving
Method:
Step 1:
- Heat oil in a pan over medium heat. Pan-fry the tofu for about 8 minutes until it turns crispy and golden brown. Remove from the pan and set aside.
Step 2: 2. In the same pan, add broccoli florets and the white parts of the spring onions. Cook for about 4 minutes until they soften but are not completely cooked through. Add teriyaki sauce and stir to coat evenly. Step 3: 3. Return the cooked tofu and broccoli to the pan, stirring well to coat the broccoli. Cook for an additional 1-2 minutes to allow the flavors to meld. Sprinkle with the reserved green parts of the spring onions, then remove from heat. Serve with cooked rice or noodles.
