When it comes to Italian cuisine, rice often plays a prominent role. In fact, across all regions of Italy, there are signature dishes that revolve around rice: from Milanese-style risotto, Veneto’s pea and rice soup, to risotto flavored with squid ink, Apulia’s potato and shellfish risotto, or Sicily’s fried rice balls. Today, I’m sharing a classic Roman dish—a potato soup with rice. This dish represents traditional Roman cuisine and happens to be one of my household favorites. It’s quick, simple, nutritionally balanced, and loved by both adults and children alike. Of course, you can substitute the vegetables I use with whatever is left in your fridge, making it a quick and tasty solution for clearing out your refrigerator. Ingredients:

  • Celery
  • Garlic
  • Potatoes
  • Onion
  • Carrots
  • Italian rice
  • Extra virgin olive oil

Cooking Steps:

Prepare the vegetables: Chop the onion, celery, carrots, and potatoes into chunks and set aside. Heat some extra virgin olive oil in a pot, then add the chopped vegetables. Sprinkle some salt and sauté until evenly mixed. Add enough water to cover the vegetables, bring to a boil, and cook over high heat for 30 minutes. Add the Italian rice, reduce the heat to low, and continue cooking for an additional 20 minutes until the rice is tender. Plate and serve.
