Curry Tofu Rolls Recipe

This spicy and easily prepared vegetarian dinner is both delicious and provides calcium, iron, vitamin C, and 2 of the 5 daily essential vitamins.

Ingredients

  • ½ red cabbage (approximately 500g), shredded
  • 4 heaped tablespoons dairy-free yogurt
  • 3 tablespoons mint sauce
  • 3 x 200g packs of tofu, each cut into 15 pieces
  • 2 tablespoons tandoori curry paste
  • 2 tablespoons oil
  • 2 onions, sliced
  • 2 large garlic cloves, sliced
  • 8 thin pancakes
  • 2 limes, cut into quarters

Method Step 1 Combine the shredded cabbage, yogurt, and mint sauce, season, and set aside. Mix the tofu with the tandoori paste and 1 tablespoon of oil. Heat a frying pan and fry the tofu in batches for a few minutes on each side until golden. Remove the fried tofu from the pan using a slotted spoon and set aside. Add the remaining oil to the pan, stir in the onions and garlic, and cook for 8-10 minutes until softened. Return the tofu to the pan and season. Step 2 Heat the pancakes according to the package instructions, then place some shredded cabbage on each pancake, followed by the curried tofu and a generous squeeze of lime.
