Curry Turkey Noodle Soup Recipe

Turkey isn’t just for Christmas. Its high protein content, abundance of vitamins, and lean meat qualities make it an excellent alternative to other white meats.

Ingredients:

  • 1-2 tablespoons Thai red curry paste (to taste)
  • 1 liter chicken broth
  • 500 grams / 1 pound 2 ounces skinless turkey breast, sliced
  • 225 grams fine rice noodles
  • 1 red chili, deseeded and sliced
  • 300 grams bean sprouts
  • 400 ml canned low-fat coconut milk
  • Juice of 1 lime
  • 2 teaspoons sugar
  • A small handful of cilantro

Cooking Method:

Step 1

  1. Heat a large skillet over medium heat and fry the curry paste for about 1 minute until fragrant.
  2. Pour in the chicken broth, bring it to a boil, and add the sliced turkey breast. Let it simmer for about 5 minutes. Then add the fine rice noodles and simmer for another 3 minutes.

Step 2

  1. Add the sliced red chili and bean sprouts, and continue cooking for 2 minutes. Then, pour in the coconut milk and bring it to a boil.
  2. Season the soup with lime juice and sugar. Ladle the soup into bowls using a spoon.
  3. Garnish each bowl of soup with fresh cilantro leaves and serve.

Recipe Tips:

  • If you prefer to use a slow cooker, place half of the cumin seeds, half of the chili flakes, oil, carrots, lentils, and 700 ml of broth into the slow cooker. Cover and cook on high for 3 hours or until the lentils are tender. Dry-fry the remaining cumin seeds and chili flakes until fragrant. Once the lentils are cooked, add the coconut milk and blend the soup, depending on your desired consistency.
  • For a richer alternative without dairy, substitute the milk with a can of low-fat coconut milk.
