Ingredients:

  • For the Marinade:
    • 1/4 cup coconut aminos or soy sauce
    • 2 tablespoons red wine vinegar
    • 1 tablespoon olive oil

    • 1/2 teaspoon freshly ground black pepper
  • For the Steak:
    • 1 1/2 pounds beef tenderloin, cut into 1-inch cubes
    • 3 tablespoons unsalted butter, divided
    • 1 tablespoon minced garlic
    • 1 cup sliced mushrooms
    • 1/2 cup onion slices (1/2-inch thick)
    • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions:

  1. Prepare the Marinade:
    • In a large resealable plastic bag, combine coconut aminos (or soy sauce), red wine vinegar, olive oil, salt, and pepper.
    • Seal the bag and gently squeeze to mix the ingredients.
    • Add the beef tenderloin cubes to the bag, press out the air, and seal again. Gently massage the marinade into the beef.
    • Refrigerate for at least 15-20 minutes but no longer than 1 hour.
  2. Melt the Garlic Butter:
    • While the beef marinates, melt 2 tablespoons of butter in a microwave-safe dish.
    • Add the minced garlic to the butter and stir. Set the garlic butter aside.
  3. Cook the Steak:
    • Remove the beef from the marinade, discarding the marinade. Pat the beef cubes dry with a paper towel.
    • Heat the remaining tablespoon of butter in a large skillet over medium-high heat.
    • Once the butter starts sizzling, add the steak cubes in a single layer. Cook for 1-2 minutes on each side until golden brown and crispy. If necessary, cook in batches to avoid overcrowding the pan.
    • Transfer the steak to a plate and cover loosely with foil. Set aside to rest.

    • In the same skillet, add the sliced mushrooms and onions.
    • Stir frequently until the vegetables begin to brown and soften, about 2 minutes. If the skillet looks too dry, add about 2 tablespoons of water to deglaze the pan, scraping up any browned bits.
    • Reduce the heat to medium and add the garlic butter mixture to the pan. Stir and cook for another 3-5 minutes, allowing the vegetables to fully soften and absorb the garlic butter flavor.
  5. Combine and Serve:
    • Return the beef to the skillet, including any juices that accumulated on the plate. Toss everything together in the garlic butter sauce, ensuring the beef is coated.
