Baked Eggs with Tomato and Feta

Smoky roasted tomatoes, savory feta cheese, and perfectly baked eggs all come together in one baking dish! Scoop this delightful (and easy) brunch straight onto toast and enjoy.
Ingredients

- For the tomatoes and eggs:
- 2 cups cherry tomatoes (or diced large tomatoes)
- 2 tbsp olive oil (divided)
- 1 tsp smoked paprika
- ½ tsp salt
- Freshly ground black pepper, to taste
- 4 oz feta cheese, crumbled
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 8 eggs
- Fresh basil leaves, for garnish
- For the salad:
- 4 cups mixed greens (arugula, spinach, or any greens of choice)
- 1 tbsp lemon juice
- ¼ tsp salt
- Freshly ground black pepper, to taste
- To serve:
- Toasted bread slices
Instructions
Step 1: Roast the Tomatoes
Preheat your oven to 450°F (230°C).
On a rimmed baking sheet, toss the cherry tomatoes with 1 tablespoon of olive oil, smoked paprika, ½ teaspoon salt, and a pinch of black pepper. Spread them out evenly on the sheet. Roast for 8 minutes, or until the tomatoes start releasing their juices and begin to soften.
Step 2: Prepare the Spices
While the tomatoes are roasting, use a mortar and pestle to coarsely crush the coriander and cumin seeds. This will release their flavor and aroma.
Step 3: Add the Feta and Eggs
Once the tomatoes are roasted, sprinkle the crumbled feta cheese evenly over them. Using the back of a spoon, create 8 small wells in the tomatoes for the eggs. Sprinkle the crushed coriander and cumin seeds over the tomatoes and cheese.
Crack 1 egg into each well. Return the baking sheet to the oven and bake for 3–5 minutes, or until the egg whites are just set but the yolks are still runny (or to your preferred doneness). Garnish with fresh basil leaves.
Step 4: Prepare the Salad
In a large bowl, whisk together the lemon juice and the remaining tablespoon of olive oil. Add the mixed greens, season with ¼ teaspoon salt and a pinch of pepper, and toss to coat.
Step 5: Serve and Enjoy
Serve the baked eggs and tomatoes hot, alongside the mixed greens and toasted bread slices. Use the toast to scoop up the rich tomatoes, creamy feta, and perfectly cooked eggs for a satisfying and flavorful brunch!
